Ingredients

Servings
Serving size 1 cup
  • 4 pounds red potatoes , washed and quartered, skins left on
  • 0.3333333333333333 cup butter , salted, melted
  • 1 cup milk
  • salt , to taste
  • black pepper , to taste

These creamy red skin mashed potatoes are an easy, rustic side dish made without peeling the potatoes. Butter and milk make them rich and creamy while leaving the tender red skins on gives the potatoes their homemade texture.

INSTRUCTIONS

PREPARE THE POTATOES

Wash and quarter the potatoes, leaving the skins on. Place them in a large pot of cold, salted water.

Bring the water to a boil over high heat. Once boiling, cook the potatoes uncovered for about 30 minutes, or until fork-tender.

Drain the potatoes well.

MASH

Return the drained potatoes to the pot or place them in a large mixing bowl.

Pour the melted butter over the potatoes and begin mashing.

Gradually add the milk, a little at a time, continuing to mash until you've reached your preferred consistency.

SEASON

Season with salt and pepper to taste.

Serve hot alongside your favorite comfort foods.
